In fact, gelatin is an animal protein, or rather collagen, derived from the connective tissues of animals. It is found in bones, skin, ligaments and tendons of animals. Transparent and colorless, it dissolves easily in water, and when cooled, it acquires a jelly-like structure. It is used for decorating cakes and other desserts, preparing delicious berry jelly and candies, and it is also very useful for health.
Despite the fact that it is derived from connective tissues, it consists of protein for ninety-eight percent, but there are no essential amino acids in it as in other products of animal origin. However, it contains phosphorus, folic acid, calcium and sodium.
Very often, gelatin is used to treat joint and bone diseases, for example, osteoarthritis. This common form of arthritis makes you feel constant pain and stiffness of the joints. The intake of gelatin or additives based on it significantly reduces pain, and improves the mobility of the joints.
Gelatin contains glycine, a substance that directly affects the functioning of the brain. Therefore, doctors often recommend it to improve memory and attention.
Due to the fact that gelatin does not have fat and almost no carbohydrates, it can be used as a filler of the stomach during a diet. Many people who consumed gelled foods noted a decrease in appetite and a feeling of "fullness" of the stomach for a long time.
It also positively affects the health of the digestive system, preventing the syndrome of the leaky gut.
Those who suffer from insomnia should also try to use jelly before going to bed, as it improves cognitive functions and quality of sleep.
Another useful property of gelatin is the neutralization of chemical compounds that enter the body with animal protein. This reduces the risk of stroke, heart attacks and other cardiovascular diseases.
Gelatin is also very good for skin, that is why it is very important for women. Its regular use will have a beneficial effect on appearance, protect the skin from damage by free radicals, renew skin cells, and also contribute to its elasticity.
It is not difficult to make a useful gelled dessert. Take 250 grams of cottage cheese, 200 g of sour cream, one glass of milk, 20 g of gelatin, 100 g of sugar and 1 tbsp. of cocoa.
Add warm milk to gelatin and leave to swell for about twenty minutes. Then pour it into a saucepan and put on a slow fire to dissolve. It is better to pass cottage cheese through a sieve, so that there are no grains. Mix sugar, sour cream and cottage cheese to a homogeneous state, pour in the milk and mix it again. Divide the mass into equal parts, add cocoa to one of them. Put the cottage cheese in layers in the molds: dark and light and put into the refrigerator for 20-30 minutes. Get the dessert out of the fridge, decorate it with berries or your favorite fruits and enjoy.
Bon appetit and be healthy!
